Food waste contributes to more than 34 million tons of solid waste sent to US landfills each year. Debbie Lee, a founder of Garden State Green Quest, will examine methods of addressing this food waste. She will focus on the Japanese concept of Bokashi, a long-standing composting method which allows for composting without presorting food. Attendees will learn how Bokashi bran, composed of enzymes, speeds up the composting process, and provides an easy way to reduce, reuse and recycle.
