Inflammation and Diet

You may have heard the term “inflammation” before. But what exactly does it mean? And how can your diet affect inflammation in your body? Come to this interactive workshop to learn the role that food plays in inflammation and how to eat to prevent inflammation.

Jennifer Shukaitis will soon celebrate her seven-year anniversary with Rutgers, where she has thoroughly enjoyed being a faculty member in the Department of Family and Community Health Sciences. During her time here, she has implemented programs in nutrition and wellness to audiences ranging in age from pre-school to older adults. She has also partnered with FoodCorps, the NJ Department of Agriculture, and several schools and non-profits to implement farm-to-school programming throughout New Jersey. Jennifer currently oversees the Community Health Outreach minor, under which she teaches one class and coordinates with other faculty in creating curriculum and teaching. Before coming to Rutgers, Jennifer worked at an association of five YMCAs as the Director of Healthy Living Programs. She holds a Master’s Degree in Public Health from New York University. In her spare time, she enjoys cycling, yoga, and force-feeding vegetables to her 3 kids.

Strong Bones for a Lifetime

Osteoporosis means “porous bone,” and looks like low bone mass related to your entire skeleton. In the United States, 54 million people have osteoporosis and low bone mass; placing one in two women and one in four men over the age of 50 at increased risk for fracture. Fractures often result in a decreased quality of life, limited mobility and the potential need for nursing home care.

Strong Bones for a Lifetime is an educational program for individuals to learn more about the prevention, management and treatment of osteoporosis. This program will educate individuals on how to prevent fractures and how to maintain or build stronger bones. Individuals will learn about calcium and vitamin D, physical activity and falls prevention. Current treatments for osteoporosis will also be discussed.

Dr. Kathleen T. Morgan is Professor in the Family and Community Health Sciences Department, Rutgers Cooperative Extension, Rutgers University. Dr. Morgan has expertise in the areas of health, nutrition, advancing health equities, women’s health, osteoporosis prevention and healthy communities. She is serving on the Ambassador’s Leadership Council for the National Osteoporosis Foundation to Advocate for osteoporosis prevention. Dr. Morgan’s goal is to improve the health of individuals, families and communities through health promotion efforts and reducing chronic disease.

NAMI: In Our Own Voice

In Our Own Voice (IOOV) is a NAMI program, developed nationally and sponsored round the state by NAMI New Jersey, designed to train individuals with various mental health conditions, to give presentations about their illness and recovery. The program is a powerful tool for community education and reducing stigma by putting a human face on an often misunderstood area of human suffering.

The program is intended to help reduce the discrimination often faced by people who deal with mental health illnesses and issues, those who care about them, and those who care for them. One or two program speakers go to a location, and present their first-hand lived experience, backed by other presenters appearing on a DVD. The live and taped presenters speak about their dark days, acceptance, treatment, coping skills, and successes, hopes, and dreams. With questions and answers, which the presenters are trained to deal with, the program takes approximately one hour.

Joint Replacement Surgery Q&A

Dr. Stephen Kayiaros will present a brief overview of arthritis of the hip and knee and outline nonoperative and surgical treatments for both. He will present the latest techniques used in knee and hip replacement surgery with a special focus on anterior approach hip replacement surgery.

Dr. Stephen Kayiaros is board certified in orthopaedic surgery. He obtained his medical degree from the University of Medicine and Dentristry of NJ - Robert Wood Johnson Medical School and his undergraduate degree from Johns Hopkins University. He completed his internship and residency in Orthopaedic Surgery as well as a fellowship in Orthopaedic Trauma at the Warren Alpert School of Medicine at Brown University followed by a fellowship in Adult Reconstruction and Joint Replacement at the Hospital for Special Surgery in New York.
